So yesterday was a decent day.... I got most of my list done, i didnt take the dog for a walk but i did go to the grocery store and walked all over that place....i do kinda boogie around there as i dont go with an actual plan.... so i see one thing and have to go to the other end of the store for the corresponding item.... i spent half an hour there.... where i kinda failed is.... i kept my calories in the desired range....under 1700....BUT they were not balanced..... i was low on the lunch calories and over did it at dinner.....seeing as you dont expend as much in the evening; taking in too many will get stored....
I have a new love, and its great for the family.... im hoooked on the Artic Garden frozen veggie mixes.... i made another stir "fry" last night..i dunno why it wouldbe called a stir 'fry' when i use water instead of oil.... But its Fabulous! even nth ekids love them...mish has two helpings... for sharing sake, here is the recipe...
2 pork chops or chicken breasts or steaks
1 pkg Artic Garden 'Asia' or 'Thai' or whatever mix desired- let it thaw some.
1 pkg VH Oriental stir fry mix ( no artifical flavors or preservatives or MSG!)
2 1/2 cups water divided
2 cups uncooked minute rice
I use the meat semi frozen- its easier to cut of the fat and slice it into nice think strips without the slimyness!
Cut up the meat and toss it in a Large skillet with 1/2 cup water. Cook on med high til cooked thru.
Add the bag of frozen veggies, cover and let the veggies heat thru.
Mix the VH seasoning into the 2 cups of water then pour into the skillet, let it come to a simmer.
Once the liquid is bubbling, add 2 cups of minute rice, stir,, cover, remove from heat, let stand for around 5 minutes.
I serve it up with salad- half and half....Half a plate of salad, half a plate of Stir fry.
This batch feeds all 5 of us...and as i said, my eldest daughter goes back for seconds. approx cost for the stir fry is around $10...
Other points of interest.... I dont believe in eleminating all the gastronomical joys of life.... "mayo" is lovely..... and i cant eat a lean meat and veggie sandwich without it..BUT, not all "mayo" is created equal! Read the bottles! Kraft Miracle Whip is only 40 cals a Tablespoon.... Kraft MAYO is 100 cals a Tablespoon!!!!!!!!!
also, there is very minimal difference between Kraft Miracle Whip and Kraft Light Miracle Whip..only 5 or 10 cals... all you really need to do is wean yourself down if your one who loads on the 'mayo'.... ive gone from Mmmmmmayo, to a skim of mayo....soo the sammie isnt dry and dull. PS...Mustard has like No calories in it, and although high in sodium- Pickles only have between 5 and 8 cals. I love sammies....as long as one remembers to go easy on the condiments, easy on the lunch meat, and go CrAzY with the lettuce and tomatoes...itz all gooooooood.
Istillhave to decide on tonights dinner.... but there is alot of veggies in the house,i just have to find something interesting to make with it....oh and un bury the eliptical as its cold out...
